The round plate with three holes is used when using your meat grinder to stuff sausage links.  Place the plate in the cylinder to allow the meat to flow easier into the tubes.  You do not need to keep the knife in the grinder when stuffing sausage

You need this #5 size if your grinder round plates are 2 - 2 1/8" across.
